Something different for dinner….

I was at a loss for dinner the other night. We’ve all been there, right? What to cook. I don’t want to eat that…I’m tired of that….it goes on and on. Well, needless to say, I was in that mood, and our refrigerator was looking pretty bare! So I decided to get creative. I had some chicken, garlic, onions, rice and pineapple. Sounds like a strange concoction, I know, but what I am about to present to you was a HUGE hit with my family!

Ginger Pineapple Chicken served with Rice Pilaf

Here is what is needed:

2 chicken breasts

1/2 teaspoon of ginger

2-3 cloves of garlic

2 tablespoons soy sauce

2 circles of pineapple

olive oil

I’ll get to the rice pilaf in a minute…but first the chicken!

Cut the chicken breasts into strips. Add the olive oil to the pan and cook the chicken all the way through. In the meantime put the pineapple into a blender and blend it up until its mushy, and put it in a mixing bowl. Add the soy sauce, garlic, ginger (and whatever else I forgot to mention) and stir. Add the mixture to the chicken and turn the heat down to let it simmer. Be sure to stir it occasionally so it doesn’t stick. I cooked it for about 20 minutes.

Now for the rice pilaf. The rice pilaf takes about 40 minutes, so you’ll want to start it before you start the chicken. Here is what you’ll need:

1/2 stick of butter

1 1/2 cup of rice

3 cups of chicken broth

a chicken boullion

small onion

Saute the onion in the butter until the onion is translucent, then add the rice and brown it. Meanwhile in a separate bowl add the chicken boullion to the chicken broth and set aside. When the rice is browned add it to the chicken broth and put in a dish with a cover and cook at 375 for 40 minutes!

There you have it! Something simple and delicious for dinner!
