“Guilt Free” desserts…..

I’ve currently been on a kick to get my family to eat a little better. We currently don’t eat many “bad” foods, and are into eating real food; i.e. meats and veggies, nothing from a box, take-out, etc. I DO have a sweet tooth, and have a habit of baking cookies wherever I feel the need for one! So I recently stumbled on a couple of recipes that utilize coconut sugar instead of white sugar, and whole wheat (or unbleached) flour, and greek yogurt. I would not make a meal of these sweets, but they are much healthier than the alternative loaded with sugar and butter! 🙂

The first one is Chocolate Chip Banana Bread.


13/4 cup Whole Wheat Flour (I used King Arthur’s Unbleached)

11/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup coconut crystals (or honey)

1/4 cup olive oil

1 egg

1 cup mashed bananas

1 teaspoon REAL vanilla

1 cup chocolate chips (dark or semi sweet)

Preheat oven to 350 degrees

Whisk together flour, baking soda, and salt in a smal bowl and set aside.

In another bowl combine sugar, and oil until smooth, add egg and beat until light in color. Add flour mixture alternately with banana and blend well. Stir in vanilla and chocolate chips.

Pour into a greased loaf pan and bake 45 minutes (or until a toothpick comes out clean).

Cool on a rack before slicing.


The next one has a few more steps to it but is so worth it! It is very rich.

Strawberry Cheesecake Brownies


8 ounces cream cheese

2 eggs

1/2 cup coconut crystals/sugar

11/2 t vanilla

1 cup Greek yogurt (plain)


1/2 cup Unbleached flower

1/2 cup coconut crystals (or honey)

1/4 teaspoon salt

1/4 teaspoon baking soda

1/2 baking cocoa

1/2 cup greek yogurt

1 egg

3 Tablespoons milk

1 teaspoon vanilla

1/4 cup chocolate chips (optional)


5-6 Large strawberries (blended)

Cheesecake: Beat the cream cheese, egg and sugar until smooth. Add greek yogurt and vanilla and set aside.

Brownies: Whisk the dry ingredients together and set aside. Mix the wet ingredients until mixed then combine with dry ingredients until just mixed. Do not over mix.

Spread the brownie batter into a greased pan, cover with cheesecake mix. Then add the blended strawberries and use a knife to swirl the top.

Bake at 350 for 20 minutes.

Then lower to 325 for an additional 20 minutes.

Cool completely before attempting to cut into it and store in the refrigerator.

There you have it! Two desserts with alternative ingredients! I never told my hubby what was in the cheesecake and he gobbled it up! 🙂
